Chinese Mandarin Style Pancake Ingredients

2 cups all-purpose flour
¾ to 1 cup boiling water, as needed
3 tablespoons sesame oil, or as needed

Chinese Mandarin Style Pancake Directions

In a large bowl, add boiling water to the flour.
Begin stirring the mixture immediately.
As the mixture becomes solid, knead the dough until it is smooth.
Cover, let it rest for 30 minutes.

Turn the dough onto a floured surface.
Cut the dough in half.
With a lightly floured rolling pin, roll each half out ¼-inch thick.
With a cookie cutter or round form, cut out 3-inch circles of dough.

Brush ½ teaspoon of sesame oil over the top of 2 circles of dough.
Layer these two circles together with the oiled sides together.
They do not need to be completely even.
Next roll out the stacked circles to a 6-inch circle.
Continue process with the rest of the dough.
Cover the prepared pancakes with a damp towel as you finish rolling them out.

Prepare a heavy frying pan over low heat.
Cook one pancake at a time until browned on both sides.
Cook on the first side for three minutes and slightly less on the second side.
Remove the pancake from the pan and pull apart the two layers.
You will now have two pancakes.
Continue with the remainder of the pancakes.
Serve immediately.
